6-8 Desiré potatoes cut into bite-size pieces (skin on) OR can use baby red potatoes
1/3 cup chopped fresh dill
½ cup regular mayonnaise
½ cup light sour cream
¼ cup chopped sweet red onion
1 tablespoon fresh lemon juice
salt and pepper to taste
additional chopped dill for garnish
Gently boil potatoes in salted water until done. Drain and cool completely. Combine other ingredients and gently fold in potatoes. Add salt and pepper to taste. Place in serving bowl and sprinkle lightly with fresh dill for garnish.
