Try one of these healthy options! Whether as a side or your main meal, these salads will brighten your day. Throw all the ingredients in a bowl together or leave them separate to make your own servings.

 

Start off with a traditional favorite:

Classic Strawberry & Feta

Ingredients

3 cups spinach leaves

1 cup feta

2 cups strawberries, quartered

1 diced yellow pepper

½ cup pine nuts

 

Directions

Wash the spinach leaves, strawberries, and pepper. Quarter the strawberries and dice the yellow pepper. Mix and enjoy!

Makes 4 servings

 

Crispy Peaches & Swiss

 

 

Crazy about summer peaches? We are too! Try this clever blend of flavors which will sweeten and shock your taste buds.

Ingredients

4 heads of romaine lettuce

2 peaches, sliced

½ cup blueberries

1 cup shredded Swiss

½ cup baked walnuts

½ cup diced mushrooms

Directions

Heat the oven to 350 degrees F. Spread the walnuts on a cookie sheet and bake for 10 minutes. Set aside and allow them to cool. Wash the peaches, blueberries, and mushrooms, then follow cutting instructions. Mix and enjoy!

Berry Swarm

 

If you love berries, this salad is perfect for you!

Ingredients

3 cups of arugula

1 ball of 12oz fresh mozzarella

1 cup blackberries

1 cup almonds

½ cup raspberries

½ cup dried cranberries

 

Directions

Wash the arugula, blackberries, and raspberries. Halve the almonds and berries. Cube the fresh mozzarella. Mix and enjoy!

Simple Elegance

Looking for a new tasting salad? This recipe combines all your favorites together! 

Ingredients

2 cups spinach

1 ½ cups halved grapes

1 cup sliced pecans

1 cucumber, quartered

1 cup crumbled goat cheese

Directions

Wash the spinach, cucumbers, and grapes. Cut the grapes, pecans, and cucumbers and crumble the goats cheese. Mix and enjoy!

Sweet and Sour Apple Delight

Ready to shed this summer heat? Get ready for fall with this simple apple salad.

Ingredients

3 cups arugula

3 sliced apples

¾ cup sunflower seeds

1 cup shredded sharp white cheddar

 

Directions

Wash the arugula and apples. Peel and slice the apples. Shred the cheese. Mix and serve!

¼ cup balsamic vinaigrette

2 tablespoons raspberry preserves

1 teaspoon black pepper

½ teaspoon salt

 

Depending on your flavors, mix the type of vinegar or preserves you use. Try cider, herb, or wine-based vinegars. Get creative with your favorite jams; try blackberry, peach, or mango.
